Yellow Sweet Clover - Melilotus officinalis (Pea family - Leguminosae)

 

Yellow Sweet Clover - Melilotus officinalis (Pea family - Leguminosae) A tall smooth plant with narrow tripartite leaves and long tapering spikes of yellow pealike flowers. It has a sweet odor when crushed. Very similar to White Sweet Clover. Roadsides, waste ground.

 

 

 

The young leaves can be added to salads or cooked as greens. Young shoots were eaten like asparagus and the pealike seeds were added to soups and stews. If the plant is gathered and allowed to rot, dicoumarin, an anticoagulant, is produced.
